Best practice and details for High Availability Networking

I am deploying a new VMWare cluster and need some advice and detailed information on NETWORKING.

I need a detailed, "best practice" document for achieving the highest reliability by using redundant network connections and redundant switches; using private networks for the Service Console and for Vmotion(VMKernel) network. How are vSwitchs and vmnics configured; what are the NIC Teaming settings, etc.

Virtual Center Server has 3 NICS.

ESX hosts have 2 built-in, 2 - quad Gig cards.

I also need to access NFS shares on the ESX hosts.

Is there a detailed document out there? Google has not turned up anything useful. I have three ESX servers set up in, what I think is, a redundant configuration. I am having trouble in testing the Vmotion failover. It seems to fail over but not back to the second NIC.

Thanks in advance.
