ESX is definitely the way to go. Look around at the success stories (Huntsville Hospital being one of them), ESX just makes more sense when it comes to attaching via a thin teminal. DRS and HA alone make it worthwhile.

Any benefits in using VMWare Virtual Desktop Infrastructure as opposed to ESX server?

Don't get confused. They are basically the same. What people normally refer to as VDI is simply workstations running on ESX. What VMWare is now calling VDI is workstations running on ESX with their VDM broker. If you need a broker, that may be the way you want to go, if you don't need a broker, then ESX is all you need.
