Virtual Switches - How Many Should I Install on each ESX Host

I'm about to deploy a cluster with multiple nodes. My concern is with the virtual networking, i'm planning to have one virtual switch for Vmotion and Service Console. My Dilema is with the VM's i have four physical nic's connected to two different physical switches. Should i have more than one virtual switch for the vm's?

In this Scenario create 4 virtual switches, and there should be 5 physical Nics ( 1vs  connected to physical Switch through 2 ports one for Vmotion and other for Service console.

1 physical Nic connected to Production and 1 Physical to Testing.

This really depends on if you are going to be using vlan tagging.  Specifically, how are the physical ports connected?  If you have 2 to each physical switch, I would suggest 2-3 virtual switches.  You can create a single switch with 2 Physical Nics and 2 port groups (1 for Service Console and 1 for VC...not idea as you should have a dedicated VC physical port but workable), and a port with 2 physical nics with as many port groups as you need.

If you send a bit more detail as to what you are looking for I could help out with the design a bit more.
